Birthday Blueberry Muffin recipe



                Childcare Clair is 4 years old! So, let us celebrate with cake!


It is the last day of the Easter break here in the Childcare Clair household, and my eldest daughter has been busy playing with friends, family and of course, little old me! She found a recipe in one of her magazines and begged me to make them with her for her last week day at home, so seeing as I am also proud to celebrate 4 years creating this website, it seemed like the perfect thing to do!

Here is the recipe :

You will need:

2 Eggs

250ml Milk
400g Self raising flour
200g Caster sugar
125ml Vegetable oil
200g Blueberries
Muffin cases


1. Preheat the oven at 200c (Gas mark 6) Whisk the eggs and add the oil and milk. Fold in the blueberries.

2. Sift the flour into the bowl and add the sugar. Gently fold the mixture together.

3.Spoon  the mixture into the muffin cases and bake for 20-25 mins until they are lightly browned. Cool and enjoy!
