A Valentines recipe

                  Why not make your loved one a healthy snack for Valentines Day!

     Hearts and Hummus

You will need:

  • Heart-shape cookie or fondant cutters (1½ to 2 inches wide)
  • Skillet and spatula
  • Food processor or blender
  • 2 tortillas or flatbreads
  • 1 or 2 red bell peppers
  • 1 or 2 extra-large carrots
  • 1 can (15 ounces)  chickpeas
  • ¼ cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin, or more to taste
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder

    Use the cookie cutters to cut a bunch of heart shapes from the tortillas. Then toast them on both sides in a dry skillet over medium-low heat. Set them aside to cool.

    Meanwhile, slice the peppers into big pieces, and use the cutters to stamp out heart shapes from the pieces. Cut the carrots into thin slices (cutting them diagonally will create a larger surface), and cut heart shapes from them.

    Now make the hummus. Drain the garbanzo beans, and reserve the liquid. Using a blender or a food processor, blend together the beans, olive oil, lemon juice, ground cumin, salt, and garlic powder until smooth. Add some of the reserved liquid from the beans, a little at a time, until the hummus is the desired consistency.

    Transfer the hummus to a serving bowl, and serve with the toasted tortilla chips and the veggie hearts
