Bacon, spinach and Pumpkin Pasta Recipe



Why not get your child to try Pumpkin with this simple recipe




1/2 butternut pumpkin, cubed
  • 1 bag spinach leaves
  • 300g bacon, diced
  • 1 onion
  • 2 teaspoons garlic, crushed
  • 100g mushrooms (optional)
  • 300ml cream
  • 500g pasta, such as spirals or penne



    1. Par boil pumpkin to a soft but firm consistency.
  • 2. Cook pasta al dente according to packet direction.
    3. Fry bacon, onion and garlic and mushroom until soft. Then add pumpkin and fry together for a further 2 minutes.
    4.Add cooked pasta and spinach leaves and stir through cream. Let simmer for approx 1-2 minutes. Serve and eat.
