Lemon Cake Recipe for Vegans


                                         Recipe time - Lemon cake suitable for vegans!!This week, I was looking through all my old recipes searching for a lemon cake recipe to use up the lemons I had in the fridge. In my old nursery recipes, I came across this vegan recipe which I had printed off of the Internet (apologies, it didnt have where it came from on it!) It makes a really moist cake, but doesnt use eggs and butter for obvious reasons! A great cake to make when you have no eggs in the house for those non vegans amongst you, like myself.
Give it a go!!

you will need:

200g castor sugar
275g self raising flour
1tsp baking powder
3 tsp lemon peel
1 tablespoon lemon juice
100ml vegetable oil
200ml cold water
1. Put the flour , baking powder and sugar in a bowl with the lemon peel. Mix well.

2. Pour over the vegetable oil, the lemon juice and finally, the water.

3. Beat with a wooden spoon or electric whisk and pour into a cake tin. (I used a long rectangular one as you can see in the picture)

4. Bake in the oven for 25 mins at 200 degrees
