Tomato Soup recipe



                                               Try this lovely recipe for tomato soup
You will need:

20 ripe tomatoes
125g butter
2 large onions, peeled and chopped
200ml double cream
Salt and pepper

1. Boil a large pan of water and take off of the heat. Drop in the tomatoes and leave to stand for 3 mins or until the skins are split when poked. Drain and cool in a large bowl.

2. Clean the pan and drop in the butter and saute fro 10 mins. Using two bowls, peel the tomatoes and add to one, putting the pips and skins in the other bowl.

3. Chop the tomato flesh and add to the pan with the onions and season with pepper. Simmer for 5 mins.

4. Squeeze the pips and skins to release all their juices and strain into the pan with a sieve. Use a back of a spoon to squeeze the juice out of the pips. Simmer the soup for 15 mins.

5. Cool slightly and liquidise with a blender, adding the cream and water if needed. Serve with crusty bread.
