Buttercream Biscuits Recipe

Today, we tried out a fab recipe to make lovely buttercream biscuits!!
You will need:

150g butter
50g Caster sugar,
150g self raising flour
100g Icing sugar
a few drops vanilla essence ( we used lemon juice!)

1. Preheat the oven to gas mark 4. Cover a baking tray with greaseproof paper.

2. Beat 100g of the butter with the caster sugar until creamy. Stir in the flour.

3. Take a piece of the dough (the size of a cherry tomato) and put on the baking tray. Flatten with a fork, repeating for each biscuit making sure there is enough space between each one. Bake for 15-20 mins until golden. Leave on the tray to cool for 10 mins.

4. Beat the rest of the butter with the icing sugar and vanilla essence until creamy. Just before serving, place the buttercream in between two biscuits. Delicious!!
