Banana Scone Recipe

Love bananas? My daughter loves try banana scones!!

You will need:

50g soft brown sugar
75g sultanas or raisins
225g plain flour
50g butter
1 medium banana

100ml semi skimmed milk
4tsp baking powder
1. Sieve the flour and baking powder into a large mixing bowl. Check the teaspoons are level.

2. Cut up the butter into small cubes and rub into the flour using your fingertips until the mixture looks like breadcrumbs. Add the sugar and sultanas or raisins and stir together until it is evenly blended.

3. Peel the banana and mash with a fork in a measuring jug. Add the milk up until the 175ml mark and add to the dry ingredients. Mix to form a soft dough.

4. Dust a work surface and roll out the dough to about 1.5cm thick. Cut into 5cm rounds and put on a non stick baking tray.

5. Brush the tops of the scones with milk and bake in a preheated oven at 220c/gas mark 7 for ten minutes.

Serve with jam, honey or lemon curd.
