Cheese and Spinach Muffins Recipe

Today's recipe has been emailed to me by Laura.........they sound delicious!!




Really simple Cheese and Spinach Muffins


Ingredients:                             Makes 12
·         250 g plain flour
·         Half a tsp salt
·         1 tbsp baking powder
·         1 tsp caster sugar
·         80 g parmesan flakes
·         100 g spinach (cooked and chopped)
·         1 egg
·         240 ml milk
·         90 ml vegetable oil

Method:
1.      Mix the flour, salt, baking powder, caster sugar and parmesan cheese together in a bowl.
2.     Fold in the egg, milk and oil.
3.     Cook and finely chop the spinach and add to the mixture.
4.     Spoon the mixture in to 12 muffin cases and cook on 180 for 15 minutes or until the muffins are golden in colour and spring back when you touch them.

These are really, really simple and so quick to make. You can adapt them by using tomatoes instead of Spinach or by replacing the Parmesan and Spinach with 180 g of Mature Cheddar.

  1. What is caster sugar? I've never heard of it!
    These muffins sound awesome!

  2. It's a type of sugar used in baking, you can use sweetener.......I am not sure of other names for castor sugar so you would know what I mean!!
