Bonfire Buns Recipe

Try this great recipe for Bonfire buns........a real treat for this time of year and very tasty!!
This is one of my favourite recipes, which I have made several times. In fact, my husbands cousin ADORES them and whenever he hears I am making a batch, I have to provide some for him!! They are great with any jam, I prefer Blackcurrant but you can go with the flow on that one!!

You will need:

175g plain flour
1 tbsp baking powder
75g butter chilled and diced
75g soft brown sugar
1/2 tsp vanilla essence
1 large egg
8 heaped tsp Strawberry jam
1. Preheat the oven to Gas mark 7 (200 c) Line a baking tray with baking parchment. Sift the flour and baking powder into a mixing bowl. Rub in the butter until you get coarse looking breadcrumbs. Stir in the sugar.

2. Beat the vanilla essence and egg together and stir into the flour mixture, creating a stiff dough. Spoon the dough onto the baking tray to make eight rough mounds.

3. Press your thumb into the middle of each mound to make a dip, and spoon in a teaspoon of jam in each one.

4. Bake in the oven for 12 to 15 minutes. Leave to cool and serve.

A great recipe which is great for children to help with too!!!
