Lemon Cakes Recipe



A recipe for lemon cakes which has a special place in my heart

In 2005, a lovely nursery cook lost her life in a ski accident. It was a tragic and really upsetting time for her family and all of the nursery staff. She was always very friendly and happy to help and was kind enough to write down a recipe for me to use with the preschool children. I still have that recipe....I will not get rid of it. So, here I share with you the recipe for Sharon Stacey's lemon cakes so that her memory will live on in her recipe!

Sharon's lemon cakes
You need:

8 oz self raising flour
8oz caster sugar
8oz margarine
4 eggs
1 1/2 lemons
1. Cream the margarine and sugar together until pale light and fluffy
2. Add 3 eggs into the mixture, one at a time whisking to mix well. With the last egg, add four spoons of flour and beat well
3.Add remaining flour and fold into the mixture
4. Finely grate the lemons and add the rind to the mix, squeeze in 1/2 lemon juice and fold in
5. Put in cake cases and cook in 180 degrees oven for 15-20 mins. The cakes are springy when cooked.
